Creamy Salmon Salad
This salad makes for an easy summer time meal, no heating
up the stove or oven, served with fresh summer time fruits as a side, the meal
is complete.
Ingredients:
8 oz of small elbow macaroni cooked
1 can pink salmon
1/2 teaspoon dry basil, crushed
1/4 teaspoon salt
3/4 cup chopped tomato
1/2 cup chopped celery
1/2 cup chopped cucumber
1/4 cup chopped green onion
1/2 cup chopped dill pickle
4 hard boiled eggs, peeled and chopped
1 1/4 cup Miracle Whip Salad dressing (mayonnaise can be used as a
substitute)

Clean salmon by
removing large sections of skin and center soft bones, flake with fork.
Combine macaroni, salmon, tomato, celery, cucumber, green onion, dill
pickle and eggs in a large bowel. Combine in a small mixing bowel the
Miracle Whip, basil and salt
Add the salad dressing mixture to the rest of
the ingredients and gently coat evenly. Sprinkle top with paprika, Cover and
refrigerate. Serve chilled
